Real Food on a Budget

drying herbs in our kitchen window real food on a budget mint our strawberries are still going strong real food on a budget

Most of you already know of my love for real, organic food. I have been carrying on and on about it in this space for years now. I am also pretty sure you know of the importance of budgeting in my family - more people means more love but also more money spent on food. Let's face it - eating healthy, real food and saving money don't exactly go together, unless you think about the money you'll save in the future on doctor's bills. However I am talking about the present. The time when we only have X amount of money to spend on groceries that need to last us Y amount of days.

I confess as hard as I try to budget (and believe me I put a lot into it - hours each week), there are weeks where we'll eat like kings for a few days only to find out we are short on money towards the end of the week and end up having to eat ramen noodles to get by. We are essentially undoing all the good of the real food we previously ate with the processed junk. Ridiculous, right?! I just find myself confused and thinking something's gotta give.

With that in mind, you can imagine my excitement when I saw that one of my favorite authors is coming out with a book all about eating real food on a budget. 😍 Lisa Leake's new book 100 Days of Real Food on a Budget is available for pre-order now and will be released on Tuesday August 14th. I had the pleasure of getting an advance copy in the mail just the other day (I may or may not have jumped up and down and squealed like a schoolgirl when it arrived). I have been reading through it every chance I get. The recipes all look incredibly scrumptious and I look forward to trying them as soon as possible - the Southwest Salad is calling my name. For my fellow vegan and vegetarian friends this cookbook has quite a few recipes to meet our needs and most can easily be adapted (ie. use homemade sprouted almond milk in place of the cow's milk). It contains recipes for other dietary restrictions as well. Equally exciting though is the entire first chapter. Lisa shares her budgeting tricks, ways to lower your grocery bill, and meal plans that even include average costs as well as a meal plan template. She also has a supermarket coast comparison chart that really opened my eyes. Granted prices vary depending on where you are living but it still gives you a good idea of where to shop for particular items. Every family that wants to eat healthy but feels like they never could due to expense needs a copy of this book. It really can be done!

Here is a sample recipe from 100 Days of Real Food on a Budget. Click on it to see a bigger version.

Oatmeal Cookie Energy Bites recipe

For once I look forward to sitting down and planning our meal plan and budget for the upcoming week. I feel like perhaps now I can finally conquer the beast that is eating healthy while staying within our means.

I am giving away a copy of Lisa Leake's first book (a big game changer and personal favorite of my family) 100 Days of Real Food on my Instagram account. Be sure to check it out!

Wiwiurka (Amazing wooden trapeze bar and postcard frame giveaway!)

Today's incredible giveaway is from Wiwiurka who offers handmade wooden play structures and heirloom toys. We have their trapeze bar and wooden climber and I just can not say enough good things about them! All three of my squirrels children spend a good portion of their days playing on them. Climbing is such an important developmental activity for children. My children had endless trees to climb back in Oregon but here in Idaho tree sightings are few and far between, and when we do see them, most are not suitable for climbing. I am so grateful for Wiwiurka's wooden climber because of this. Now my children get the climbing they need, even in the suburban desert!
In their own words:

Tell us a bit more about yourselves:
Ana: I am a Mom of three little girls who are my main inspiration. I am behind the sales, promotion and custom service of our family business. I enjoy crafting more than anything else in the world, lol. We live in a quaint Mexican mountainous village. Surrounded by the beauty and calmness of the forest. L on his Wiwiurka trapeze bar How did your business begin?
Several years ago, my husband came up with the idea to build wooden playgrounds using reclaimed wood from his tree work. The first swing set was made when my eldest daughter was 2 months old. Eventually the idea of the Climber /Wiwiurka Monkey Bars were born.
Marek: (who is from Germany), Climbing Trees is part of my work, which I have enjoyed since childhood. Even though climbing is essential in proper development and gross motorskills; children no longer have time or opportunities to climb trees. Now as a team, we spend our days thinking of, sketching, making and testing new playstrcutures and wooden toys. Most of our toys are made from the reclaimed wood of avocado, oak, ash, guavo, citrus and cedar trees. C at the top of the Wiwiurka wooden climber What are your biggest influences?
The beauty of the forest and the organic shapes from the trees.

Where did your business name came from?
Since I love to climb trees, squirrel seemed appropriate. To honor my Polish heritage, I chose squirrel in Polish-Wikiwurka.

What is your favorite product?
The wooden climber. We never tire of watching children using it. It is a must in every home, day care and school. It's such a beautiful piece; also made from reclaimed wood. Since it's such a popular product, we are currently out of stock! Though coming soon!

Waldorf Homeschooling (and a giveaway!)

Waldorf Homeschool

Can I let you in on a little secret? I have been struggling with planning my Waldorf homeschooling with K. I have studied Waldorf education for almost eight years now but my focus has always been on early childhood education. I had only skimmed the surface of lower and upper school education.

We were so blessed to have spent four years at the school of our dreams (Portland Waldorf School) and when we had to leave our dream for Idaho, I knew that our deep love of Waldorf education would lead us to homeschooling. I was already homeschooling C anyways (Waldorf kindergarten) so adding on second grade with K didn't seem like a big deal. BUT here is my biggest issue - the only model I have ever know is an actual Waldorf classroom. I know homeschooling can not replicate the classroom and to try to do so is just setting myself up for failure. I know this, yet my brain just can't seem to translate how to do it all in a home environment. Now each time I sit down to prepare I get overwhelmed with all of knowledge and information at my fingertips. My lack of confidence has shaken me so much that I can't seem to wrap my head around something I love  and that should be relatively simple.

That's where the books you see pictured above step in. I already wrote about A Little Way of Homeschooling but today I want to share  The Waldorf Home School Handbook with you. This book came to me when I needed it most and I am so grateful for that. I have already read it cover to cover but I keep it on my nightstand for constant  reference and inspiration.

quote nothing is worth more1 quote the beauty of the waldorf school1

It is written by Donna Ashton. You might recognize her name. She is president and founder of The Waldorf Homeschooling Connection, a company dedicated to teaching homeschooling families using Waldorf Education how to simply and successfully create their homeschool.

Donna really simplifies things and brings you back from feeling overwhelmed to feeling like I can do this! I have been using the daily rhythm guide featured in the book to get myself back on track and to figure out areas that haven't been working for us. For example, I wasn't balancing our in-breath and out-breath activities and didn't even realize it until it was mentioned in chapter two. I have since begun adjusting our rhythm and things are already running smoother.

A little more on her book:

Homeschooling can be complicated and frustrating, especially if you are overloaded with information. The good news is that you don’t have to figure it out alone. Donna Ashton’s The Waldorf Home School Handbook is a simple and step-by-step guide to creating and understanding a Waldorf-inspired homeschool plan. Within the pages of this all-in-one homeschooling guide parents will find information, lesson plans, curriculum, helpful hints and the secrets behind the three Areas for Optimum Learning. Join Donna as she guides you through the Waldorf method and reveals how to educate your children in a nurturing and creative environment.

Her book also features:
-Tailored curriculum
-Teaching methods and materials
-How to plan
-Meal planning
-Daily rhythm maps

Today Audrey Press is offering one of you lucky readers your very own copy of The Waldorf Homeschool Handbook.

Encaustic art for K (And a giveaway!)

encaustic art 082 encaustic art (about to go into the oven) 118 137 encaustic fun in a can!!

Recently, K noticed some flyers for encaustic (layered wax) painting classes at school and wanted to learn how to do it herself. Encaustic art was a medium I had never tried before but I was up for the challenge. I used to live for any kind of artistic expression I could find- painting, sculpture, charcoals... you name it, I loved it (The artist in me misses those days. Maybe I will come back to them again someday). Then, as if it was fate, we came across a layered wax drawing kit from Eye Can Art. Everything K needed for her artistic intentions all in one can, how could we go wrong?!

She set up a space at the table with some books and images for inspiration and then got to work on it straight away. C, Little L and I all huddled around her as she opened the kit. I have never seen all of us so engrossed in something like this before. I do believe there may have even been a few "ohs" and "ahs" as she pulled each piece from the kit. I was so very pleased that they were high quality supplies that even an adult would be happy with instead of the usual cheaper "kid quality"supplies you find in a lot of children's art kits. That makes such a huge difference. I also loved that they included a brief history of encaustic art along with the instructions. I read it out loud for everyone to hear turning K's project into a mini art lesson for all of us.

K decided she would draw St. Therese in a field with flowers. When she finished her base layer with the oil pastels she placed the sheet of beeswax on top and I placed it in the oven for her. We all watched the beeswax melt and then took it out to cool. C especially enjoyed watching the beeswax change from clear to cloudy and then back to mostly clear as it cooled down. Once it was completely cool K added her final layer by drawing little details and more flowers. Voila! It was done! She thoroughly enjoyed the process and the end result. In fact she enjoyed it so much that she made the second one in the kit right after. Now C and I want to give it a shot, too.Wouldn't you?!

The kind folks over at Eye Can Art want you to share in the fun and exciting learning experience we had by offering any one kit of the winner's choosing (except their back-ordered Book in a Box) to one of you!

For a chance to win, simply leave a comment on this post!

If you would like an additional chance to win:
-like Eye Can Art on Facebook
-follow Eye Can Art on Twitter
-post this giveaway to Facebook, Twitter, or your blog

and please make sure to come back and leave me another comment letting me know you did so! Trust me, you will be just as thrilled with their kits as we are. If I could enter, I would! I will close comments on Thursday April 25th and announce the winner within this post.

I bought all the stuff to try "real" encaustics years ago. But I never got around to it (I'll admit to being a little intimidated). This looks like the perfect baby step into the process. I love that someone thought to offer this technique to children. Marvelous! Thanks for sharing with us (and my, what a little artist you have there!).

Good luck everyone, and thank you Eye Can Art for making this happen!

p.s - I still have not found the time to put up a disclosure, but I just wanted to add that I am not being compensated financially. I only share products and finds such as these because we truly do love them. We just want to share the love with all of you, too!

Tales from Mariposa Forest (giveaway!)

A few months ago I had the pleasure of discovering Mariposa Forest through Jennifer, the talented storyteller behind these enchanting tales. I loved the whole concept of it, I mean - what child (or adult, for that matter!) doesn't love to get mail. And this is no ordinary mail, not by a long shot! The brightly colored envelopes that arrive at our door are filled with magical stories that take my children to another land and simultaneously invite them to explore our own forest around us.  Not to mention the exquisite photographs that help to bring the stories to life. (Oh what I wouldn't give to pick Annie's brain on improving my own photography!) My girls truly believe these stories are being sent to them by forest creatures far away and look forward to receiving them in our mailbox each month. In fact, they love them so much they are currently working on a little something to send back to their favorite forest dwellers. More on that later, but shhhh... don't let Jennifer and Annie know!

Without further ado, please join me in welcoming  Jennifer and Annie the creative masterminds behind Mariposa Forest.

--------------------------

Both Annie and I would like to say a huge thank you to Nicole for giving this opportunity to tell
her wonderful readers about our stories.

mariposa
How did Mariposa Forest begin?

Mariposa Forest began as a way to channel both of our creative energies. Annie told me of an
idea that she had and we started talking and as we talked, things changed and evolved and
then one day it all clicked. We both have a strong love of nature and we spend most of our days
with our children in the forest where we live. Our connection to nature and to this piece of Earth
we call home is something we both feel is extremely important for us as well as our children.
Mariposa Forest is our way of sharing our love of storytelling, photography, and that connection
to nature with children and parents everywhere.

mariposa3

Are your stories inspired by a particular forest around you?

Yes. While the stories aren’t “set” in a real place, I draw inspiration from the forest that
surrounds us. We live in the beautiful Gatineau Hills in West Quebec and we spend our days
roaming and exploring the incredible beauty all around. Often while we are out, I will see a
tree stump or hollow log and wonder who lives there. I often tell my children little stories of the
creatures that might live there. I feel very connected to this place and so when I am writing, my
stories often come from this forest.

mariposa2

Please tell us a little about Mariposa forest (and a bit about yourselves)

In a nutshell, Mariposa Forest is an imaginary experience delivered to your mailbox. More than
just stories, we deliver something that rarely happens in our fast paced, digital world, we deliver
a real, tangible letter to your child in the mail. Yes, old fashioned snail mail. Both Annie and
I have small children and we realized how excited they would get to receive birthday cards,
holiday cards, even the weekly grocery circular. We combined my storytelling with Annie’s
beautiful photography, threw in our love of nature and a dash of hard work and came up with
Mariposa Forest. They are storytelling stories, meant to be read out loud. The letters come from
the inhabitants of the forest and follow the seasons. We include photography of the forest, just
to give a glimpse or a new perspective. The stories also include a Reflection to help the children
stop and take a look at the world around them and observe what is happening where they live.
Our hope is that no matter where you live, whether it is an Urban jungle or the remote forests,
the stories will help your child feel their connection to the world around them as well as open
their imagination to see the world as a canvas for stories and creative play.

KCCO : The Koala Edition & Luna Grey Fiber Arts Giveaway!

The act of creating, in one form or another, preserves my sanity amongst the chaos of life. This explains why I always have more than one project going at a time as well as why my housework tends to fall behind. I enjoy seeing what others are working on and keeping calm with, too. What are you creating? What is keeping you going? Snap a picture and share it with the rest of us by leaving your link below.

After dreaming of this sweater for months it is finally done and on it's happy owner! I mentioned before that this project was envisioned  awhile ago but I just wasn't sure how to execute my plan. I wanted to make C a sweater that would remind her (and myself) of a koala bear. 'Koala bear' has been C's nickname for as long as I can remember. I don't even know how it started but it just fits her. She is my little shy, sensitive one that likes to cling on to me whenever she can. I wanted to knit her something that would truly make her feel special. Not just another knit from Mama (because let's face it, I am always knitting for my children) but one with meaning that she will truly treasure, but still be able to wear every day for climbing trees and things of that nature. I think I pulled  it off.

I didn't have a pattern in mind but I knew it had to be a grey sweater. I scoured Ravelry from some free goodies and then found Lila(c)loud. The pattern is newborn size but I modified it to fit C. I have detailed notes on my ravelry page. The one thing I would do differently if I was to knit this again is to make the button holes closer together, but otherwise it's C and Mama approved. I used all three of my skeins of yarn, biting my nails to the finish fearful I would run out.

all that is left!!

Talk about cutting it close- this is all the yarn I had left! I ended up having more than enough, though. It fit perfectly before I blocked it, now it's a bit too big - but that's just room for growth! The reclaimed yellow cedar buttons from Wooly Moss Roots added the perfect finishing touch. I love the contrast between the buttons and the yarn. *swoon*

This sweater could not have happened without the help of Jackie at Luna Grey Fiber Arts. I knew I needed the perfect shade of grey to pull it off. I wanted it to be a semi-solid yarn to add more dimension to the knit. But seeing how I usually knit in colorful colorways for my children - grey was  a bit out of my comfort zone. Jackie understood exactly what I was looking for and custom made just what I wanted. The colorway is called Pewter. Her work truly exceeded my expectations. To top it off the yarn is next to skin soft which is extremely important when it comes to C's sensitive skin. She  describes most wool as 'itchy'.

Finishing this sweater seemed like the perfect time to introduce the talented and wonderful Jackie from Luna Grey Fiber Arts. I could go on and on and still not say enough good things about her, but I thought I would let her do the talking...

Luna
My shop name was inspired by my retired racing greyhound, Luna. She is a quiet, gentle, and ever present companion in my dye studio.

How did Luna Grey Begin?

I have been knitting for about 6 years and spinning yarn for 2 years. When I first started knitting, I did not pay much attention to the yarn I was using. My yarn budget was tight and I simply did not have the background knowledge to know which fibers to choose. I knit with whatever was available at my local, big box craft store. Once I found my local yarn shop, Tangle, it was all over. I was smitten with all of the gorgeous, natural fiber yarn in amazing colors and textures. I also began attending fiber festivals in my area. Here, I found awe inspiring collections of hand dyed yarn and fiber. The summer of 2010, I purchased some dye from a merchant while attending the Estes Park Wool Market in beautiful Estes Park, Colorado. I began playing around with dyeing yarn and roving. My hand dyed yarn attracted enough attention at my little knitting group that I started dyeing yarn for friends. They told their friends and it kind of took off from there.

JackieLunaGrey

Which do you enjoy more? The process of dyeing yarn? Or knitting yarn?

They are quite different so it's a little hard to compare. I love that with dyeing yarn, each skein is unique. I come up with color combinations in my head that I think will look a certain way once I put them onto yarn. However, I am often surprised to create something completely unexpected. When colors combine and overlap they do crazy things sometimes. I have learned that there are certain colors that always work well together and look amazing (like blue and green). While other color combinations are much harder to get right (like red and turquoise or yellow and gray). I can't imagine a time where dyeing yarn will feel like "work". It's still so fun and a great creative outlet. Knitting is really relaxing for me. It's how I unwind at the end of a busy day. I love that I can knit side by side with my kids while they are painting or reading. I also love being able to knit gifts for friends and family. There is something so comforting knowing that with each stitch you are thinking of your loved one. So much time and love and thought goes into every hand knit gift.

HudsonCinder
We raise chickens and bees on our 1/2 acre lot in the city.

Your colorways are breathtaking and you seem to be able to read minds when it comes to custom orders (you did with mine!). It all seems so intuitive for you. How do you come up with them?

Thanks, so much. That's really sweet of you to say. I am endlessly inspired by color combinations I see in the natural world. Here in the high desert of Western Colorado, we are surrounded with such beauty. We have the massive red rock cliffs of the Bookcliff Mountains to the north. The deep greens and grays of the Grand Mesa to our East. And, the stunning reds and golds of Colorado National Monument just to our South. I also fondly remember the colors of my home prior to living in Colorado. We lived in Key West, Florida for ten years. The Florida Keys are some of the most beautiful places on earth and are often in mind when I am thinking up blue or green colorways. I love doing custom orders. I know that sometimes you have a certain color in mind and you just can't seem to find it anywhere. With custom orders, you are able to basically design your own yarn. It puts some of the creative process in the hands of the customer and allows them to be involved in the process of coming up with the perfect color. What could be better than that?

SpiralBlanket
My kids (boys ages 7 and 4) love to help me name my yarn colorways. They are so creative and come up with most of the names I use in my shop.

Thank you Jackie for taking the time to let us get to know you!

Jackie is giving one of you lucky readers the chance to see why I am just so head over heels in love with this yarn for yourself. She is offering a skein of yarn in her Tie Dye 2 colorway along with a knitting project bag.
