Monday is our favorite day of the week. It is baking day and boy do we bake! We bake (and cook) all day, usually making a loaf of bread, some kind of sweet treat, pizza dough,and items from scratch that we need for the week like 'cheese', BBQ sauce, marinara sauce,ect.
We decided to make this Monday even more special. We gave K a new book 'The Apple Cake'. We read the book (about an old woman who really wants to make an apple cake but has no apples so takes some plums to the market in hope to trade and ends up trading over and over with most of her town until she finally gets her apples It's a sweet,sweet book), then made apple cake together.
I made it sugar free and drizzled honey over it when it cooled down. Yum,yum!!
Apple Cake
4c diced apples
3/4 cup maple sugar
1tsp salt
1 tsp baking soda
1/3 cup oil
1/2 tsp cinnamon
1 3/4 cup flour
1/2 tsp nutmeg
Pre-heat oven to 350 degrees.Mix apples,maple sugar and oil in one bowl,then the rest of the ingredients in anotehr bowl. Combine. Pour in an oiled 8x8 pan and place in the oven for about 20 mins. Remove and cool. Once cooled drizzle with honey. The cake will absorb it. IMO, it's too bland without the honey.
K really wanted to fly her new kite she got from Grandma. She has been wanting to fly a kite for at least a year now,from seeing them in her seasons books. We took her to the beach after dinner Monday night and let her fly it. She had a blast!

This sounds like a wonderful day... and that apple cake looks delicious! I just so happen to have a bunch of apples handy... but no maple sugar? Do you think it would be ok with regular or brown sugar instead?
yes yes :) the original recipe called for regular sugar,same amount. hth! :)

Yum...I have a picture of Ben sleeping with Zola our cat...I called it "co-sleeping?" We just adopted 2 kittens who are a bit scared...but the kids love them...Cats help make a house a home. I love to see the posts on your blog...lovely. Where in NY are you from?

I agree cats absolutely make a house a home! My cat of 20 years passed away last January and our house felt like nothing. I miss her very much but our 2 kittens keep us busy and have so much love too!
